Chipotle Meatballs over Spaghetti Squash


Chipotle meatballs are baked and tossed with tomato sauce over roasted spaghetti squash, and served with sauteed kale and a tart apple mash.

Stovetop- Place squash and meatballs in small frypan and heat over medium low, stirring frequently until meatballs are heated. Place kale and apples in additional pans and reheat over low, covered, stirring frequently.

Microwave- 1-2 minutes, stirring halfway.
