Roasted Chicken, Braised Cabbage and Celery Root Leek Cakes


Roasted chicken over braised purple cabbage and apples with a side of celery root leek cakes.

Ingredients: Gunthorp Farms chicken thigh, red cabbage, apples, cider vinegar, bacon fat, spices, onion, celery root, leeks, arrowroot, egg, salt, pepper, garlic powder, ghee.

Stovetop- Heat cabbage in a saucepan over medium low heat, stirring frequently until warmed. Heat cakes in frypan over medium low heat with teaspoon fat (coconut oil or ghee). Warm chicken in pre heated 300 degree oven.
Microwave- Heat, covered loosely, 1-2 minutes, stirring cabbage halfway.
